Ingredients:
2 large firm apples, peeled, cored, and halved
4 tablespoons brown sugar, divided
2½ tablespoons butter, melted and divided
¾ teaspoon ground cinnamon, divided
2 tablespoons old-fashioned rolled oats
1 teaspoon all-purpose flour
¼ teaspoon kosher salt
1½ cups low-fat vanilla ice cream
Instructions:
1. To begin, mix together 1 tablespoon brown sugar, 1 tablespoon butter, and 1/2 teaspoon of cinnamon.
2. Now, halve the apples and core them. Then cut each half at 1/8-inch intervals.
3. Place the apples in a greased baking dish and coat them with the brown sugar mixture. Cover with foil and bake at 400 degrees for 20 minutes. Remove the foil and bake for another 10 or so minutes. Remove apples from oven and allow to cool for 10 minutes.
4. While the apples cool, combine remaining butter, brown sugar, cinnamon, flour, salt, and oats in a mixing bowl and whisk away.
5. Place the oat mixture atop your apples and bake them for another ten minutes. Then, broil for a mere two minutes.
6. Remove from the oven, spoon some ice cream on top, and enjoy!
