It happens to the best of us — inexplicably, you end up with an excess of pasta sauce and don't feel like making the exact same meal again, nor do you want to fall into a culinary creativity rut. To make these scrumptious lasagna roll-ups, you'll need:
30 ounces of bolognese sauce (she uses leftovers, but you can use fresh sauce if you'd prefer)
16 ounces of ricotta cheese
1 1/2 cups of grated parmesan cheese
2 cups of shredded mozzarella
1 cup of frozen chopped spinach, thawed and strained
1/2 cup of chopped parsley
a dash of pepper
garlic salt to taste
1 package of lasagna noodles (at least 15 sheets)
To being, preheat your oven to 375 degrees. Spread a layer of sauce in an oven-safe dish and boil the lasagna noodles until they're al dente.
Next, move on to the filling. Combine the ricotta, parmesan, mozzarella, spinach, parsley, pepper, and garlic salt in a bowl. Be sure to save some of the mozzarella and parmesan to put on top of the lasagna roll-ups later.
Then, spread a spoonful of the filling onto a cooked noodle. Be sure not to put too much, as it will be much harder to roll it up. Once it's spread out, add a little of the sauce on top.
Roll up the noodle, taking care to keep as much of the filling inside as possible.
Gently place the roll in the sauce and repeat until you've completely filled the dish.
Next, cover all the roll-ups with a generous layer of sauce.
Cover with the remaining mozzarella and parmesan and pop it in the oven for about 30 minutes or until the cheese is melted and slightly browned.
To finish, garnish with fresh basil and parsley.
