Nothing says comfort food quite like meat and potatoes, and shepherd's pie brings the two together in perfect harmony. The combination of hearty beef, mixed vegetables, cheese, and mashed potatoes, all carefully tucked into a flaky pie crust is unbeatable.
Though it may seem difficult, we've found a way to make shepherd's pie even better. In the recipe below, you'll learn how to make bite-sized shepherd's pot pies that are perfect as appetizers or a whole meal (let's be honest: you can't just eat one). Prepare to be transported to a higher plane of comfort food — bite by savory bite.

To make these perfectly-portioned shepherd's pot pies, you'll need:
~pie crust
~½ pound of ground beef
~1 cup of mixed vegetables (carrots, corn, and peas are traditional, but add whatever else you like)
~mashed potatoes (you can make them from scratch, but since it's such a small amount, packaged is fine too)
~shredded cheddar cheese
~parsely to garnish
If you feel like amping up the filling even more, Farah from The Cooking Jar has devised a way to turn the beef flavor up to 11.
To begin, prepare your mashed potatoes however you see fit and set it aside for later. The recipe below uses plain mashed potatoes, but feel free to add garlic, chives, or cheese to yours. Then, roll out your pie crust on a large flat surface and cut it into six pieces.
Next, carefully line each well of a lightly sprayed muffin pan with dough. It doesn't matter if the ends are folded over each other, but be sure that the bottoms and sides of each comparment are fully lined.
Brown your ground beef in a saucepan until cooked through, then add your vegetables and stir.
Carefully place a spoonful of your filling into each cup.
Next, grab your mashed potatoes and place a dollop onto each of the mini pies. If you're feeling fancy, you can scoop the potatoes into a piping bag and pipe a pretty design on top insted.
Bake for 30 minutes at 400 degrees.
Then, carefully take them out of the oven, sprinkle some cheese on top, and bake them for an additional 5 minutes.
All that's left to do is garnish with parsley if you want, and enjoy! For a ful step-by-step tutorial, be sure to check out the video below. Don't forget to SHARE with your friends!
