How to make deviously cute meatloaf muffins

Meatloaf gets a bad rap sometimes, and undeservedly so. When done correctly, meatloaf can be juicy and flavorful, leaving your family begging for more. If the picky eaters in your home still need a little convincing — or if you feel like playing a little practical joke — these savory meatloaf cupcakes from Allrecipes make quite the impression.
Before you ask: no, the frosting is not actual frosting. Rather, it's piped mashed potatoes (or sweet potatoes, per Wellness Mama's recipe), maybe with a few drops of food coloring mixed in to sell the illusion even more.

To begin, simply whip up a batch of meatloaf. Any recipe will do, but if you want one specifically tailored for this particular dish, Karen Steinke Reilly has submitted hers to Allrecipes. You'll need:
1 pound of ground beef
1 cup of crushed saltine crackers
1/2 cup of chopped onion
1/2 cup of chopped green bell pepper
1/3 cup of milk
1 egg
1 tablespoon of Worcestershire sauce
2 cloves of chopped garlic 
1 teaspoon of ground black pepper
1 teaspoon of seasoned salt
1/2 cup of ketchup
1/2 cup of brown sugar
4 cups of mashed potatoes
1 cup of shredded Cheddar cheese
crumbled bacon and cherry tomatoes as garnish
food coloring (optional)
Scoop your meatloaf mixture into each well of a lined muffin pan, leaving 1/2 inch space on top. Bake for about 30 minutes at 350 degrees.

Once they've cooled, decorate to your heart's content with mashed potatoes, shredded cheese, bacon bits, or a cherry tomato.
