Cauliflower may not be everyone's favorite vegetable, but this casserole just takes it to another level with its tasty cheese addition and the freshness of the herbs. Adding cauliflower to your family's regular diet may be a much more beneficial idea than you imagine since it's not only very low in calories but also a great source of fiber and B-vitamins.

Cauliflower Casserole

2 tablespoons (28 g) butter
2 stalks celery, diced, plus 1 tablespoon chopped fresh celery leaves
1 large head cauliflower, cut into florets
1/2 cup (120 ml) sour cream
1 bunch fresh chives, chopped finely
1/2 cup (50 g) cheddar
1/2 cup (50 g) parmesan
1/2 teaspoons (14 g) salt
1/2 teaspoon (1 g) pepper
Heat oven to 375°. Grease a 2-quart (11 x 7) baking pan with 1 tablespoon of butter.
Mix celery stalk, cauliflower, sour cream, salt, pepper, and half of each cheese in a large bowl, then pour into baking dish.
Cut the remaining tablespoon of butter into small pieces and scatter over the surface. Top with remaining cheeses, celery leaves, and chives.
Bake for 25 minutes, covered with foil. Remove foil and bake for another 15 minutes, until cheese is browned and bubbling.
Tip: Make this dish into a satisfying main course by stirring in 1/2 lb. of diced ham during step 2.
If you'd like, you can add some extra freshness to this recipe with some herbs like parsley, or some turmeric for a different but great taste.
