Chicken can be a particularly difficult bird to cook at home. If done incorrectly, chicken meat can come out tough and dry. However, when cooked just right, chicken can be moist, tender and full of flavor. Rather than cook the chicken in the oven after basting it with brine, instead, this recipe takes the chicken outdoors and on to the grill.
The secret to this grilling recipe though is, of all things, a can of beans. Using a can of baked beans, the chicken retains a unique amount of moisture and flavor.

You'll begin with some oil, molasses, dry mustard, bacon, onions, dry rub, beer and jalapeños. After opening up your can of baked beans and removing the label and glue outside, you'll add your mixture of spices and flavors.
Drain a bit of the excess liquid from the can of beans first to make room for your spices, etc. Once you've emptied the can, you can add your layers of spices, beer and vegetables. You could get creative here, adding anything from brown sugar and apples to tomatoes and bell peppers. You could even choose a different type of beer or maybe even substitute an alcoholic apple cider for instance.
You'll then place your cans of beans on the grill, letting them warm up while you prep your chicken. Oil up your two four pound chickens, adding whatever rub or spices you'd like.
Once your beans are cooked, you can move the cans to the center of the grill and place squeeze your chickens over the each can. It'll be difficult, but it'll fit!
Cover your grill and let the chickens cook for about 45 minutes.
After 45 minutes have passed, brush on the barbecue sauce of your choosing to give your chicken added flavor and a nice caramelized glaze. Then cover the chicken again and let it cook for a final 45 minutes or so.
Your chicken should have an internal temperature of 175 degrees fahrenheit and that's how you'll know it's done.
Once they're ready, you can go ahead and take each can plus its chicken off of the grill.
Your perfectly cooked, moist chicken should slide right off of the can.
What your left with is a can of juicy, flavorful beans which have soaked up all of the chicken's juices, giving you the perfect side for your barbecued chicken! Enjoy!
