One of the great things about casseroles is the opportunity to be resourceful, to use up leftovers and foods nearing their expiration date. In a similar fashion to slow cooking, you can often combine a number of ingredients in a casserole pan and end up with something quite scrumptious. Below, check out this recipe for a creamy chicken casserole that likely won't require an trip to the store.
The recipe, courtesy of Allrecipes, calls for four chicken breasts to be cooked on the stove top. That's an option, but you can also use leftover chicken if you have it available. Additionally, you could use a rotisserie chicken if you want to go the shredded route.

After adding the chicken to the casserole pan, it's time to get to work on the other components. In a large bowl, mix together a can of cream of chicken soup, sour cream, mushrooms, bell peppers, and peas. (You can improvise here if you want to use different vegetables).
Add the creamy mixture atop the bits of chicken.
Before it goes in the oven, crush up some Ritz crackers and sprinkle them on top. This will give your dish an extra added crunch. Bake it at 350 degrees Fahrenheit for 30 minutes.
