How to make My Little Pony cupcakes

Looking for a cupcake for the next birthday party? This fun decorating project will have kids going goo-goo eyed for the tasty treat. Each cupcake pair works as a treat and a party favor. The best part of this cupcake recipe is the surprise you get when you bite into it and get an eye-full of bright colors!
For this recipe, feel free to use your favorite light-colored cake batter. White works particularly well because it absorbs the food coloring. These rainbow cupcakes are tasty, attractive and super easy to make. Check out how simple this recipe is in the video at the end of the article.

Make your white cake mix according to the directions. (Remember to only use the egg whites to keep the cake from turning yellow). Mix well. 
Split your batter into six different bowls (you could do less if you only want a few colors).   Add a different color of food coloring to each bowl and mix well. Try red, orange, yellow, blue, green and purple for the full rainbow effect. 
Put a scoop of purple at the bottom and work your way backwards through the colors of the rainbow (red should be the last color you add). Gently tap the pan on the the table to get the air bubbles out of your batter. Don't worry your colors won't mix! 
Bake your cupcakes on 350 degrees for 20 minutes and let the cupcakes cool completely before decorating. 
Use your favorite buttercream recipe (or check out this easy one from All Recipes.) Add food coloring to your frosting recipe to get your favorite rainbow shades for your cupcakes. This version recommends the same six colors used for your cake batter.  Using a frosting bag, pipe a layer of frosting starting on the outside and working your way around to the inside. 
Use Starbursts, fondant or another type of taffy to create different decorations for each cupcake. Try hearts, stars, butterflies and cherries to match the different ponies. Add a My Little Pony figurine on top of the matching cake. Kids will love this fun twist. They get a treat and a toy! 
Tip: Freeze the frosted cupcakes for a few minutes so the ponies don't sink into your cake.
