Breakfast casserole topped with bread is a hearty way to start the morning

Typically when most people are left with stale bread, they toss it out or feed it to birds. However, just because bread is a couple days old doesn't mean it's totally useless. In fact, it can be given a second life if used creatively, specifically as the crusty topping of a breakfast casserole!
In this nifty recipe from Allrecipes, all the best parts of breakfast come together for one hearty breakfast that's a great way to start your morning. Sausage, green onion, eggs and crusty bread form a breakfast casserole you'll be excited to wake up to in the morning.

Start out with cooked sausage and green onion as your base layer for this casserole. You can use turkey, beef or even vegetarian sausage. Although Allrecipes used just green onion, feel free to add more vegetables if you'd like. Bell peppers, onions or even tomato would be a nice addition.
Next you'll add a generous helping of cheese. You can use cheddar like they did here or you can try a Mexican blend.
Then pour on the scrambled egg mixture. You can use just normal beaten eggs here or you can get creative like Allrecipes did and mix in a country grave mix with your eggs for even more rich flavor.
Lastly, top your casserole with your cubes of bread and feel free to season the bread topping with paprika as they did here or just traditional salt and pepper.
Bake the casserole for about 40 minutes and voila! You now have a meaty, cheesy, crusty breakfast casserole for the whole family to enjoy!
