Her Avocado Caprese Skillet Chicken is the perfect example, as it features the bold and classic flavor of Caprese paired perfectly with mild, creamy avocado. Piled on top of some garlic chicken, this combo is simply to-die-for!

The tomatoes and avocado bring some really great nutritional benefits to this meal on top of increasing your fruit-fiber intake (both are fruits, despite popular belief!). 
Tomatoes contain the phytonutrient lycopene, an antioxidant. According to healthyeating.org, "There are many mechanisms by which lycopene may protect against cancer. Lycopene is a potent antioxidant and can eliminate damaging free radicals in the body’s tissues, in addition to increasing production of the body’s own antioxidant enzymes." Pairing tomato with avocado is the perfect way to take advantage of this lycopene content because it must be eaten with fat to be absorbed by the digestive tract. 
Don't panic when you hear the word "fat" associated with avocados, though! Healthyeating.org explains, "Avocados are high in fat, but they contain the heart healthy monounsaturated fat. Diets higher in monounsaturated and polyunsaturated fats may decrease the risk of heart disease." Even better, avocado contains vitamin E (a powerful antioxidant) and multiple B-vitamins and is a great source of potassium. Potassium helps in the metabolism of carbohydrates and also plays a crucial role in heart contraction, making avocados an excellent health booster!
