How to make stuffed 'chicken fajita bombs'

You've probably heard of stuffed potatoes and stuffed peppers, but this stuffed Chicken Fajita Bomb recipe from Tasty,  takes it to the next level.  This dish is yummy enough to please the entire family and is chock full of healthy vegetables. For this recipe you need:
2 tablespoons canola oil
1 red pepper, diced
1 green pepper, diced
1 yellow pepper, diced
1 onion, diced 
1 teaspoon Kosher salt
1 teaspoon freshly ground black pepper
4 ounces cream cheese
½ cup shredded cheddar cheese
½ cup diced pepper jack cheese
3 boneless skinless chicken breasts
2 teaspoons salt
2 teaspoons chili powder
2 teaspoons cumin 
2 teaspoons garlic powder
3 tablespoons canola oil

To start, heat your oil in a large skillet over medium heat until the oil it hot. Add your red pepper, green pepper, yellow pepper, onions an Kosher salt. Cook until the vegetables are soft and the onions are transparent. 
Next, pour the vegetable mixture into a separate bowl and add cream cheese, cheddar cheese, pepper jack cheese. Mix all of this together until completely combined. Make sure your cream cheese has softened at room temperature to allow for easier stirring. 
In a separate bowl, salt your chicken breasts. Add chili powder, cumin and garlic powder. Press seasonings into the meat, until the chicken is coated well. 
Once seasoned, remove your chicken from the bowl. Using a sharp knife, slice from the top to the bottom of the chicken breast (long ways), most of the way through. Be careful to leave some meat attached. 
Fill your chicken with the vegetable mixture and press closed. Next, place your stuffed chicken breasts into a heated, oiled pan and cook for 5 minutes on each side, or until cooked through. 
Serve your chicken with guacamole, sour cream and salsa.
