Ingredients
2 pounds boneless, skinless chicken breast
1/2 tablespoon onion powder
1/2 tablespoon smoked paprika
1/2 tablespoon garlic powder
Salt and pepper to taste
8 ounces beer
16 ounces Sweet Baby Ray's BBQ Sauce
Directions
1. Sprinkle seasonings over the chicken breasts until well-coated. Place in a slow cooker.
2. Pour the beer and about 3/4 of the bottle of Sweet Baby Ray's Barbecue Sauce over the chicken. You can always use a different BBQ sauce, but you might want to adjust the amount of beer (or ginger ale) you add depending on how thick it is.
3. Cook on low for 8 hours, or on high for 4 if you just can't wait to dig in.
4. Remove the chicken and shred with two forks. Then stir the chicken back into the sauce in the slow cooker and let sit for 10 to 15 minutes.
This shredded BBQ chicken makes a great family meal with no hassle. Serve it on a toasted bun with corn on the cob and coleslaw. This recipe is also great for parties and gatherings. Simply leave it in the slow cooker on the warm setting for a self-serve buffet. Don't forget to double the portions because everyone will want seconds.
