The topping on this chicken zucchini skillet is simply to-die-for

So many people think that eating healthy requires the strict omission of many widespread favorite foods like bread products, cheese, chocolate, etc., but this is quite often a limited way of thinking about healthfulness. Instead of thinking about a healthy diet in terms of what you restrict, it is perhaps better to think about it in terms of how you balance. The recipe idea below for a White Cheddar and Zucchini Skillet is a great example of how a dish can still be considered healthy while allowing you to partake in some of your less healthy indulgences.
The recipe, from Becky Tarala, Blogger at The Two Bite Club, features a hearty base of zucchini and yellow squash with lean chicken breasts on top. These ingredients alone provide plenty of nutrition, vegetable fiber, and are low in fat and carbohydrates. Then a small portion of white cheddar and breadcrumbs (which could be left out to keep this dish very low-carb) are used to create a crispy, cheesy top-layer that will satisfy any cravings you may have for richer flavor.

The ingredients you will need for this recipe are listed out below:
-2 boneless skinless chicken breasts
-4 tablespoons olive oil, split
-1/2 teaspoon garlic powder
-1/2 teaspoon onion powder
-1/4 teaspoon kosher salt
-1/4 teaspoon pepper
-2 medium zucchini, sliced into rounds
-2 medium yellow squash, sliced into rounds
-1/2 red onion, sliced
-1/2 cup (2 ounces) white cheddar cheese, shredded
-1/4 cup panko breadcrumbs
Cheese and breadcrumbs may not be the healthiest ingredients, but there's no harm in treating yourself to a small portion on a meal that is, at base level, as nutritious and well-rounded as this one. After all, everything is good in moderation!
