Print this recipe
You've had a hard day and all you want to do is head straight back home, tuck into a hearty dinner, and retire for the night. It is possible, and it’s not as hard as it may seem. All it takes is a quick trip to the supermarket the night before, a slow cooker, and a few minutes of prep before heading to the office in the morning – and dinner will be ready and waiting for you when you get back.
The peppers lend a smoky sweetness to the dish, resulting in a flavorful bowl of goodness that’s best ladled over hot steaming rice. Pure comfort food!
