How to make Korean beef in a slow cooker (video)

Korean food is a vibrant and exciting part of Asian cuisine, and once you've tasted it, you're a convert.  Generally, beef and slow cookers are a culinary marriage made in heaven.  Combine that with these traditional Korean flavors, and you have a dish so aromatic and delicious, it fully explains the meteoric rise in popularity that Korean food has been enjoying for the last few years.
Like all the best slow-cooker recipes, this punchy and satisfying dish can be thrown together in minutes, and yet tastes as though you took the day off work to prepare it.  If you can't track down Sriracha sauce then just substitute whatever hot Asian-style chili sauce you can find.

2 pounds beef sirloin thinly sliced
1/2 onion, thinly sliced
6 garlic cloves, minced
1 tablespoon ginger, finely minced into a paste
1 teaspoon chili flakes
1/2 cup soy sauce
1/2 cup brown sugar
2 tablespoons corn starch
1/3 cup beef broth
1.5 tablespoons Sriracha
2 tablespoons rice wine vinegar
1 tablespoon sesame oil
5 green onions, thinly sliced
1 tablespoon sesame seed
In a 6-quart slow cooker combine onion, garlic, ginger, chili flakes, soy sauce, brown sugar, beef broth, Sriracha, vinegar and sesame oil, then mix well.
Add in beef and stir thoroughly making sure each piece of beef is coated with sauce. Cover and cook for 2 hours on low.
Make a slurry by mixing corn starch with 2 tablespoons of water. Pour into slow cooker and mix well. Allow to cook for another 45 minutes.
Garnish with green onions and sesame seeds then serve with rice or noodles for a complete meal.
Pro tip: If you're looking for a traditional accompaniment, one of the best known Korean foods is Kimchi, a fermented vegetable dish that Koreans eat with virtually every meal.   Why not serve some with the beef and rice for a deliciously authentic foodie experience?
