The Dr Pepper pork recipe below is just what the doctor ordered! With only five minutes of prep, all you need to make this delicious pulled pork are a few simple ingredients and a little patience while you let your slow cooker do its job. Serve this sweet and tangy pork shoulder over rice or on a toasted kaiser roll with coleslaw for the perfect pulled pork sandwich.
The Dr Pepper adds a unique complexity of flavors and sweetness that you can't find anywhere else. The addition of chipotle peppers (I like to use the canned chipotle in adobo sauce) gives the pork a smokiness with just the right amount of heat. If you want a spicier version, add twice as much chipotle. Finally, apple cider vinegar rounds out the richness of the pork and the sweetness of the Dr Pepper. I left the final ingredient, barbecue sauce, as optional. You can either mix it in at the end or add it on top. Enjoy!

4 tablespoons canned chipotle peppers in adobo sauce, finely chopped (with sauce)
2 cups Dr Pepper
2 tablespoons apple cider vinegar
4 garlic cloves, crushed
2 bay leaves
1 large onion, large diced
2 pounds boneless pork shoulder
2 tablespoons salt
1 tablespoon pepper
1 tablespoon smoked paprika
1 tablespoon Dijon mustard
2 cups BBQ sauce (optional)
Add everything from chipotle to onion to a 6-quart slow cooker. Stir to combine.
Rub pork with salt, pepper, smoked paprika and Dijon mustard. Add to slow cooker.
Cover and cook on low for 8 hours, or on high for 5 hours.
Remove pork and shred it with a fork. Combine with cooking liquid.
Optional: Stir BBQ sauce into shredded pork or pour on top when serving. This will give your pork that extra-tangy BBQ flavor.
