Whole Chicken in a Slow Cooker

2 teaspoons salt
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon black pepper
1 teaspoon garlic powder
1 whole chicken, about 4 pounds
6 cloves garlic, peeled and crushed
1 lemon, cut in half
5 sprigs fresh thyme
1 sprig fresh rosemary
1 large yellow onion, 1-inch dice
2 carrots, cut into 1-inch chunks
2 parsnips, cut into 1-inch chunks
1 bulb of fennel, cut into 1-inch chunks (can be substituted with 4 sticks of celery)
½ pound small red bliss potatoes, cut in half
In a small bowl, mix salt, paprika, dried oregano, black pepper and garlic powder. Rub over chicken, including inside the cavity.
Place garlic cloves, lemon, fresh thyme and fresh rosemary inside the cavity of the chicken.
Arrange onion, carrots, parsnips, fennel and potatoes in a 6-quart slow cooker.
Place the whole chicken on top of the vegetables.
Cook on low for 7 hours, until the inner leg reaches 165 degrees Fahrenheit.
Serve with cooking juices.
