Apples and pork are a wonderful combination. This is a braised pork recipe with bit of a Southern twist. Sweet, tangy and full of flavor, this dish will be a winner with all pork lovers.
Serve up this great fall or winter dish at Super Bowl, New Year's Eve or other special occasion. It's simple and delicious.

Slow cooker cider-braised pork

1 large onion, large dice
1 medium-sized carrot, large dice
1 stalk celery, large dice
4 garlic cloves, peeled and crushed
4 bay leaves
2 pounds bonelss pork shoulder
1 tablespoon salt
1 teaspoon black pepper
1 tablespoon Dijon mustard
6 cups apple cider
3 tablespoons apple cider vinegar
Arrange onion, carrot, celery, garlic and bay leaves in a 6-quart slow cooker.
Rub pork shoulder with salt, pepper and Dijon mustard. Place on top of vegetables in the slow cooker.
Pour cider and vinegar into the slow cooker.
Cook on high for 4 hours or low for 8 hours.
Shred pork with a fork and serve with apple cider sauce (the cooking liquid) and vegetables.
