Always a favorite, this slow cooker Italian beef recipe is simple to make and soaked in flavor. This is the perfect dish to whip up in the morning before work, or running errands so that you can come home to a fully cooked meal that's the worthy creation of an Italian master chef. It's also a great meal to put together for parties because you serve it up on bread, and it can stay nice and hot in the slow cooker as people pick at it.
Most of the ingredients you probably have stashed away in your cabinets, but you will need to run out and grab a nice fresh roast. Prep for this meal takes about 5-10 minutes and you can cook it low and slow for upwards of 10 hours, or quickly on high for about 5.

Ingredients
5-lb beef round or rump roast
2 1-oz packages Italian dressing seasoning
2 tsp salt
2 tsp ground black pepper
2 tsp dried oregano
2 tsp dried basil
2 tsp powdered onion
2 tsp dried parsley
2 ½ tsp garlic powder
2 bay leaves
3 cups water
To serve options: sub sandwich buns, sliced provolone cheese
sliced roasted peppers, sliced pepperoncini, grilled onions, or whatever other toppings you like on your sandwiches
Directions
1. Add water and all of the seasonings into a saucepan. Mix together and bring to a boil.
2. Add roast to a 6-quart slow cooker, then pour boiled seasoning mix over the roast. Cover and cook on low 9 hours or high for 4 hours.
3. Remove bay leaves and shred roast with two forks inside the slow cooker. Cover and cook on low for another 30 minutes, allowing the meat to soak in the juices.

We recommend putting the meat on buns, then topping with cheese and putting the open-faced sandwich in the oven to broil for 1-2 minutes allowing the cheese to melt. Remove from the oven and finish off with roasted peppers.
