6 tablespoons butter
½ cup all-purpose flour
2 cups milk
1 cup heavy cream
2 cups shredded pepper Jack cheese
6 medium Yukon Gold potatoes, peeled or not, sliced very thin, about ⅛ inch
1 cup thinly sliced yellow onion
2 cups ½-inch diced Black Forrest ham
4 cloves garlic, minced
1 cup diced canned roasted bell peppers
½ tablespoon minced fresh thyme leaves
1½ teaspoons salt
1 cup shredded cheddar cheese
1 cup panko bread crumbs
1 tablespoon chopped fresh parsley
Preheat oven to 375 degrees Fahrenheit.
In a medium-sized sauce pot, melt butter on medium heat until it starts to bubble. Whisk in flour.
Gradually pour in milk and cream, whisking until smooth. Simmer for 2 minutes.
Whisk in pepper Jack cheese. Remove from heat.
In a mixing bowl, gently, without breaking the potatoes, mix sliced potatoes, onions, ham, garlic, roasted bell pepper, thyme and salt.
In a 3-quart casserole dish, arrange a layer of potato mixture. Pour a cup of cheese sauce over the top. Repeat to make three to four layers.
Cover with foil and bake for 1 hour.
Mix breadcrumbs and cheddar cheese together in a small mixing bowl.
Remove foil and sprinkle cheddar cheese and breadcrumbs on top. Bake uncovered for 15 minutes, or until cheese starts to turn golden brown.
Remove from oven and let casserole sit for 15 minutes before serving. Garnish with parsley.
