Chicken, ham and cheese — it's a combination that's hard to not to love. Chicken cordon blue can be a bit time-consuming to make: cutting the chicken, stuffing it, breading it, frying and then making a sauce. Sometimes we want everything about a cordon bleu without all the time it takes.
In this recipe, we break down to the basics and cook it all in a casserole. You use cooked rotisserie chicken and simply shred it. You dice ham, Swiss cheese and Parmesan cheese and then make a quick bechamel-like sauce. After mix everything in a casserole dish, top it with bread crumbs, and off to the oven it goes. In 25 minutes, you'll have a meal the whole family will love.

6 cups shredded cooked chicken
2 cups diced ham
1 cup diced Swiss cheese
1 cup shredded Parmesan cheese
½ cup butter
½ cup flour
3 cups chicken broth
½ cup cream
1 tablespoon Dijon mustard
1 cup plain breadcrumbs
Preheat oven to 375 degrees Fahrenheit.
Evenly spread chicken in a casserole dish. Sprinkle ham, Swiss cheese and Parmesan cheese on top.
Put a saucepan on medium-high heat. Add butter. When butter is melted, add flour. Mix together and cook for about 3 minutes on medium heat to make a roux.
Slowly whisk in chicken broth. Allow to simmer for 5 minutes, and then add cream and Dijon mustard. Simmer for another 3 minutes.
Evenly pour sauce into casserole dish.
Top with breadcrumbs and bake in oven for 25 minutes, or until top in golden brown.
