Pork butt and beer in a slow cooker for a treat that everyone will love

Stop everything.  This is a recipe for pulled pork, beer and melted cheese sandwiches.  You're welcome.  Don't even think about putting off making this; it tastes every bit as good as it sounds, and then some.  Don't be tempted to use a leaner cut of pork here, you need those rich seams of fat to extract pure pulled pork magic.
Perfect to serve to friends and family while watching the big game or a movie, or for a fabulously indulgent supper, these grilled sandwiches are what bread would ask to be if it could talk.

1.  Add the pork to your slow cooker, along with the spices, beer, and two-thirds of the bbq sauce before cooking on low for 8 hours.
2.  After the cooking time is finished, remove the pork and shred with two forks, add the remaining bbq sauce and cook on low for 4 more hours, before removing any bones and forking through to thoroughly distribute the sauce and juices.   
3.  Meanwhile, melt the butter in a small pan, whisk in the flour and stir for 1 - 2 minutes until cooked slightly and golden, then add the beer and milk, stirring constantly to prevent lumps forming, then reduce the heat and add the cheese, stirring until the sauce is thickened and smooth.
4.  Using an electric skillet or griddle over medium heat, place 4 slices of bread, butter side down onto the griddle and top with a few handfuls of pulled pork, some of the cheese sauce, and finally a second slice of bread, butter side up.  
5. Flip the sandwich and cook until golden and crisp on each side, then serve while hot.
