This is one of them, and you're right to trust your instincts because it tastes really, really good.  The timeless classics, hamburger and mashed potatoes, are brought together in the most delicious way, and adding melted cheese only ever makes good things even better! 
If you have leftover mashed potatoes, this recipe is a great way of using them up.  The quantities aren't set in stone, so if you only have 3 cups of mashed potato but more than 1 lb. of hamburger, for example, this dish is still going to work out just fine.

Go old skool and serve with steamed carrots and peas for a really satisfying dish that will warm up the coldest evenings. This recipe freezes well, so make extra and have it on standby in the freezer for a night when only cheeseburger casserole will do!

Cheeseburger Casserole

2 lbs. (900 g) ground beef
1 1/2 (11 g) teaspoons sea salt
1/2 (1 g) teaspoon ground pepper
3 green onions, thinly sliced
1 can (14 oz., 400 g) diced tomatoes
1 tablespoons (7 ml) Worcestershire sauce
3 tablespoons (45 ml) tomato paste
2 tablespoons (30 ml) whole grain mustard
1 1/2 cups (150 g) shredded cheddar cheese
3 cups (975 g) leftover mashed potatoes
Combine first eight ingredients (ground beef through mustard) plus 1/2 cup of the cheddar cheese in the bottom of a 6-quart slow cooker. Stir thoroughly to combine.
Spread mashed potatoes over top and sprinkle with remaining cheese.
Cook on low for 4 hours.
Remove lid and cook for an additional 30 minutes on high to allow top to crisp.
Tip: For an authentic burger flavor, garnish with chopped pickles and shredded iceberg lettuce.
