Who knew that such a flavorful, delicious dish was this easy to make? With only 15 minutes of prep, you are ready to let this Asian-inspired pork stew simmer in a slow cooker.
I love the Thai-influenced flavors of this dish. The peanut butter makes this dish rich, creamy and delicious. Don't forget the chopped peanuts and cilantro garnishes for texture and extra flavor! Serve over rice or noodles, and you have a complete meal.

Slow cooker peanut pork stew

5 cloves garlic, minced
1 tablespoon minced fresh ginger
½ cup low-sodium soy sauce
½ cup smooth peanut butter
½ tablespoon honey
½ cup low-sodium chicken broth
1 tablespoon sambal oelek chili paste
1 teaspoon lime juice
1 teaspoon apple cider vinegar
2 pounds pork shoulder, cut into bite-sized pieces
1 large yellow onion, thinly sliced
2 large green or red bell peppers, thinly sliced
4 tablespoons roughly chopped toasted peanuts
2 tablespoons roughly chopped cilantro
8 lime wedges
In a 6-quart slow cooker, add everything from garlic to vinegar. Whisk until smooth.
Add pork, onions and bell peppers. Mix well, until everything is fully incorporated.
Cook on high for 4 hours, or on low for 8 hours.
Gently stir. Serve over rice or noodles and garnish with toasted peanuts and cilantro, with lime wedges on the side.
Pro tip: For an authentic Thai flavor, add a stalk of smashed lemongrass and replace the honey with tamarind paste.
