I have always loved Greek flavors. With savory herbs, bright lemon, potatoes, garlic, dill and olives, this recipe has no shortage of flavor. The secret to this Greek chicken with lemon and potatoes is to cook the chicken with the breast side down. As the chicken cooks, the fat from the legs will drip down, keeping the chicken breasts nice and juicy.
Slow and low is the key to any good braise — that and a braising liquid. Since we are using chicken broth, you'll need to remove the skin of the chicken before you start cooking. Otherwise, you end up with flabby chicken skin, which no one likes. Stuffing the chicken with aromatics is key. This infuses the flavors directly into the chicken. Potatoes turn this chicken into a complete meal!

1 pound small red potatoes, quartered
1 large yellow onion, large diced
7 cloves garlic, peeled and smashed
4 bay leaves
1 tablespoon fresh oregano
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
3-pound whole chicken, skin removed
1 tablespoon salt
2 teaspoons pepper
1 tablespoon dried oregano
1 lemon, cut into quarters
2 bunches dill
4 tablespoons chopped, pitted Kalamata olives (optional)
Place potatoes, onion, three garlic cloves, bay leaves, fresh oregano, lemon juice and olive oil into a 6-quart slow cooker.
Rub chicken inside and out with salt, pepper and dried oregano.
Stuff chicken cavity with quartered lemon, dill and 4 cloves garlic.
Place chicken on top of potatoes, breast side down.
Cook on high for 5 hours. Internal temperature of chicken should reach 165 degrees Fahrenheit.
Remove chicken and divide into portions. Serve with potatoes and optional Kalamata olives.
Pro tip: When removing the skin from the chicken, use a knife and your fingers, pulling skin and fat away from the chicken and cutting as needed.
