Sometimes we come across fantastically simple casserole recipes that are not only cheap and delicious, but have and added element of fun in their preparation! When preparing a meal for the family, it's always helpful to choose a recipe that is not only fast and yummy, but one that also has a great job built in for the little ones if they want to help to put dinner on the table. This amazing recipe for an easy Taquito Enchilada Casserole from Good Cook is a playful take on a classic enchilada recipe, and with an extra (yet very quick) step of rolling your delicious taquitos beforehand—this casserole is sure to delight the whole family!
You will only need some basic soft flour or corn tortillas, scrambled eggs, grated pepper jack (or cheddar) cheese, salsa verde, avocado, cilantro, and scallions. Although this dish is incredibly filling and finger-lickingly good, the salsa verde and fresh cilantro make this a surprisingly bright dinner—absolutely perfect for enjoying on those late summer evenings in with the family.

Good Cook begins by preheating the oven to 325°F before spreading out the tortillas on a plate or counter top. They then add a spoonful of scrambled eggs and a sprinkling of grated cheese to half of each tortilla (this is where the kids can help out!). The filled tortillas are then rolled tightly into little taquitos and placed into the bottom of the casserole dish. Depending on the size of your casserole dish, you can generally fit between 10 - 14 taquitos in. Feel free to add them in either lengthways or horizontally, as long as they make one layer in the bottom of the dish you should be fine!
Next, Good Cook pours one jar of salsa verde over the top of the taquitos. You can use the back of a spoon to spread the salsa verde evenly. Good Cook opts for a pre-made salsa verde, but if you're feeling a bit adventurous, you can always make a quick and simple salsa verde from scratch. We recommend this delicious recipe from Food Network.
The grated cheese, you can use either pepper jack or cheddar cheese for this, is then generously sprinkled on top of the salsa verde, ensuring that the entire casserole is as covered as possible. This cheese will form the top crust of the dish, so be sure to have enough grated to cover the entire dish.
The casserole is then placed into the oven preheated to 325° F (uncovered) for 15 minutes, or until the cheese is melted. During these 15 minutes, you can quickly slice the scallions, roughly chop the cilantro leaves, and chop up the avocado into 1 inch-sized chunks. You don't want to cut the avocado too early before serving, as avocados tend to brown easily if left out for too long.
Once the 15 minutes are up, Good Cook removes the casserole from the oven and adds the chopped avocado and cilantro leaves along with the sliced scallions. The scallions add a delicious fresh onion-like notes to the dish while provided a much-needed crunch, while the avocado adds a bright creaminess without being too heavy. Cilantro brings a fantastic herbaceous punch and packs every bite with incredible flavor. Although you can opt to leave out any one of the three garnishes, we advise that when possible, use all of them. When made to these specifications, this easy recipe from Good Cook in the video below is loaded with incredible fresh ingredients and winning flavor combinations. This will surely be a dinner to remember.
