How to make a pancake breakfast lasagna

Getting creative for breakfast can sometimes be a challenge. Chef Eric Greenspan has risen to the challenge and conquered it in his recipe for pancake lasagna. The basics of the recipe are buttermilk pancakes, breakfast sausage, cheese, eggs, bacon, and a béchamel sauce.
Start by making your pancakes ahead of time. You can use a pancake mix, or you can follow Greenspan's recipe found on Food Network. Greenspan trims his pancakes into squares or rectangles so that they are easier to work with. Pre-cook your breakfast sausage and grind it in a food processor so that it's easy to spread. Greenspan also whisks his eggs and then puts them in a blender with heavy cream to get them to a creamy paste that's easy to spread.

To assemble the lasagna, you will first cover the bottom of the pan with a layer of béchamel. Then, place a layer of pancakes on top and cover the pancakes with béchamel. Next, place the sausage evenly over the top.
Spread half of the egg mixture over the sausage, and then cover that with cheese. You're now ready to place on another layer of pancakes followed by sauce.
After you've covered the pancakes with sauce, spread the remaining eggs over the top. Now, place bacon liberally over the top. Greenspan does say that once you have the basics of the pancake lasagna down, you can feel free to add other ingredients to it as you desire. You can spice it up with jalapeños, or make it a little healthier by putting bell peppers and onions in it.
Once the bacon's on, cover it with cheese and pop it in the oven at 375°F (191°C) for 10 minutes or until the cheese is melted. Let it cool completely before cutting it to serve. Greenspan recommends reheating it once it's served.
