This recipe for Creamy Chicken Noodle Soup Casserole incorporates everything that we love about a classic chicken noodle soup, but it uses only one casserole dish and calls for less than 10 minutes of prep time!
If you have any leftover cooked chicken hanging around, you can add it to this recipe easily (see the tip below), but this dish is so flavorful on its own that you can make it without shredded chicken and enjoy it just as much. This wonderful casserole takes less than 45 minutes from kitchen to table, making it the perfect family dinner for those short on time. Simple pantry spices mix beautifully with cream of chicken and mushroom soup, whole milk and chunky pasta to create a dish that is so easy, dinner will be ready before you've even batted an eye.

Ingredients:
1 16 ounce box (450 g) pasta: rigatoni, penne, rotini or ziti
2 10.5 ounce (300 g) cans cream of chicken soup
1 10.5 ounce (300 g) can cream of mushroom soup
3 cups (700 ml) water
1 1/2 cups (225 g) frozen peas
1 cup (150 g) frozen corn
1 carrot, chopped
3/4 cup (180 ml) milk
1/2 teaspoon thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions:
1. Preheat your oven to 425 degrees Fahrenheit (or 220 degrees Celsius). Place the uncooked pasta into the bottom of the casserole dish before adding the vegetables and the spices over the top. Pour in the cream of mushroom soup, the cream of chicken soup, the water and the milk and stir everything until well mixed and all of the pasta has been coated in liquid. Make sure that the liquid is covering the pasta (if necessary, add a bit more water to ensure that the pasta is covered).
2. Place the casserole in the oven and bake for 30 minutes. Remove from heat and stir well immediately. Serve with a side of crusty bread or a sprinkling of freshly grated parsley over the top.
