How to make slow-cooker Parmesan ranch potatoes (video)

This is such an easy side dish to make in the slow cooker! Red and gold potatoes slow-cook together with ranch seasoning, Parmesan cheese and butter.
If I am making my protein on the stove or on the grill, I utilize my slow cooker for the side dish. What I absolutely love about this recipe is that you don’t have to peel the potatoes! Just give the potatoes a rinse, then dice and toss in the slow cooker. This side dish is great for a potluck, too!

Start by adding diced red and gold potatoes to the slow cooker.

Then sprinkle a ranch dressing packet and Parmesan cheese over the potatoes. Top the potatoes, ranch and Parmesan with sliced butter. If you use russet potatoes, take an extra step and melt the butter, then pour it over the potatoes evenly. Russet potatoes brown very quickly after being sliced, and the melted butter will keep them from doing so. Red and gold potatoes work best in this recipe.

Cook this on high for 3 1/2 hours. Don't peek while this is cooking, or the potatoes will not get tender.

The potatoes turn out tender and creamy on the inside. The ranch and Parmesan go great together in this side dish.

Ingredients
4 cups diced red potatoes
4 cups diced gold potatoes
1 (1 ounce) packet ranch dressing mix
½ cup grated Parmesan cheese (plus more for serving)
½ cup sliced butter (1 stick)
Directions
1. Add the potatoes to a 6-quart or larger slow cooker. Sprinkle the ranch packet and the Parmesan cheese over the potatoes. Lay the slices of butter on top.
2. Cover and cook on high for 3 1/2 hours, without opening the lid during the cooking time.
3. Stir the potatoes gently and sprinkle with a bit more Parmesan cheese. Serve and enjoy!
