Slow Cooker Chocolate Chip Blondies

1¼ cups light brown sugar
2 eggs, beaten
1 teaspon vanilla extract
8 tablespoons butter, melted
1½ cups flour
1 teaspoon baking powder
½ teaspoon sea salt
6 ounces chocolate chips
Spray the bottom of your slow cooker well with cooking spray.
In a medium-sized bowl, mix the brown sugar, eggs and vanilla extract using an electric mixer until fluffy and pale in color.
Add the butter, flour, baking powder and salt to the wet mixture. Mix until a smooth batter forms. Fold in the chocolate chips.
Pour the batter into the bottom of the slow cooker. Line the top of the slow cooker with a few paper towels to absorb excess moisture.
Cover and cook on high for 2 hours, or until a knife or toothpick comes out clean after piercing the center.
Allow to cool for 5 minutes, and then serve with your favorite ice cream or whipped cream.
Pro tip: Try substituting the chocolate chips for your favorite candy or chocolate bar (roughly chopped). M&M's, Smarties or even crushed Oreos work wonderfully in this recipe!
