This is one of my favorite comfort food casseroles to make. It's perfect as a side dish to chicken to serve on a cold Winter day. The casserole is extra creamy and cheesy making it delicious to serve with a warm roll to soak up the creaminess.
I call this casserole "Mac and Cheese" because it's made the same way as macaroni and cheese but without pasta noodles. Instead of the elbow macaroni I use cauliflower florets which is perfect to turn this into a creamy dish. Add bread crumbs on top for a crunch and jalapeno for a little kick.

Cauliflower Mac and Cheese Casserole

Ingredients
1 large head of cauliflower, cut into florets
1/4 cup butter
2 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup milk
8 ounces shredded cheddar cheese or Monterey jack/cheddar mix
1/3 cup bread crumbs
1 jalapeno pepper, diced
Directions
1. Preheat oven to 400 degrees.
2. In a small saucepan melt your butter over medium high heat. Add flour and salt + pepper and continue stirring until smooth.
3. Add milk and cheese into a saucepan, mixing until cheese is completely melted.
4. Add cauliflower to 9 inch circular casserole dish.
5. Pour cheese sauce on top of the cauliflower.
6. Sprinkle bread crumbs and diced jalapeno pepper on top. Cover with aluminum foil and bake for 30 minutes.
7. Serve.
