This dish is incredibly easy, yet intensely satisfying. Start off by simply sauteing cauliflower in butter before layering it on the bottom of a casserole dish. Crunchy roasted cauliflower casserole

Total time: 55 minutes
Serves: 4-6
Ingredients
2 tablespoons butter
1 head cauliflower, roughly chopped
1 cup Greek yogurt
2 teaspoons paprika
1 teaspoon chili powder
1 lemon, zested and juiced
2 teaspoons cumin
1 tablespoon garlic powder
1 teaspoon curry powder
1 tablespoon flour
2 teaspoons salt
1 teaspoon pepper
Directions
1.Preheat oven to 400 degrees Fahrenheit. Lightly grease a casserole dish. 
2.  Melt the butter in a saute pan and add the chopped cauliflower. Saute until lightly browned. Place the cauliflower florets in the bottom of the casserole dish.
3. In a bowl, mix together all ingredients from yogurt to pepper. Pour the yogurt over the cauliflower florets. Use your hands to mix until all of the florets are coated well.
4. Place into the oven and bake, uncovered, for 35 to 45 minutes, or until a crust forms on the cauliflower and it has slightly browned.

Pro tip: For an added punch of flavor, substitute half of the Greek yogurt for sour cream!
