Breakfast burritos are always deliciously filling. In the recipe below, we make an awesome breakfast burrito without any of the additional carbs from the tortilla. It's an easy recipe that will fill you up and get you going!
Start by mixing one whole egg and 3 egg whites, and then combine the eggs with milk. This egg mixture acts as your tortilla. All you need is a medium- to large-sized nonstick pan to make the egg tortilla. It's important you use a nonstick pan, or the recipe won't work. We fill our egg burrito with bacon, ham, roasted potatoes, avocado and spinach, but you can fill yours with anything you like!

1 whole egg
3 egg whites
2 teaspoons milk
2 tablespoons olive or vegetable oil
2 slices cooked bacon
⅓ cup sliced ham
½ avocado, sliced
½ cup small-diced roasted potatoes
½ cup baby spinach
In a bowl, whisk together egg, egg whites and milk.
Heat oil in a large nonstick pan over medium-high heat. Spread the oil all over surface of the pan. When oil becomes hot, add eggs. Depending on the size of your pan, you might need more or less of the egg mixture; you want a thin layer that will easily roll up. Swirl the pan around as needed to evenly spread out the eggs. Cover and cook for 1 to 2 minutes.
Gently flip eggs. Cover again and cook for 1 minute.
Carefully remove cooked eggs from the pan and place on a plate.
Using the egg as a tortilla, layer bacon, ham, avocado, potatoes and spinach on top. Roll into a burrito.
