Who doesn't love a good taco? Here is a recipe that is not only delicious but also healthy! Sounds too good to be true, right? The main concept that sets this dish apart is that instead of using a regular flour or corn tortilla, the shell is actually made from cauliflower.

Low-carb tacos

Ingredients
For the shells
1 medium cauliflower
1/3 cup of egg whites
Directions
1. Cut up the cauliflower and place into a food processor or blender. Mix until the cauliflower is shredded into small crumbs.
2. Place crumbled cauliflower into a microwave safe bowl. microwave for 3 minutes, stir, microwave for 3 additional minutes.
3. Place a washcloth or cheese cloth inside a clean dish. Pour cooked cauliflower over the cloth to remove the moisture. Allow cauliflower to cool for 10-15 minutes.
4. Place cooled cauliflower into the dish and add in the egg whites. Stir until a paste forms. Shape into taco shells.
5. Lightly spray a baking pan. Place shaped cauliflower on the pan. Bake at 400F degrees for 10 minutes. Flip over and bake for an additional 6-8 minutes.
6. Allow to cool for a few minutes before serving.
Pro tip: The best thing about this recipe? The filling can be whatever you like! The possibilities are virtually endless. Try shredded chicken with cilantro and red onion. Or shrimp, tomato and avocado.
