4 chicken breast, boneless skinless
½ cup pesto (store-bought or see homemade version below)
1 cup shredded mozzarella
2 large tomatoes sliced
1 teaspoon salt
pepper to taste
Preheat oven to 375°F.
Season chicken with salt and pepper. Then place in a greased baking dish.
Evenly spread pesto on top of each piece of chicken. Top with tomato slices. Then sprinkle with mozzarella cheese.
Bake in oven for 50-55 minutes, or until chicken is fully cooked and mozzarella is golden brown.

4 cloves garlic
1½ olive oil
½ lemon juiced
½ cup fresh grated parmesan
½ cup pine nuts (optional)
½ teaspoon salt
In a food processor, add in basil, garlic, lemon, parmesan, pine nuts and salt.
Turn food processor on and slowly drizzle in olive oil. Mix with a spoon, scrapping the sides. Then blend again for 30 seconds to make sure everything is finely chopped and fully incorporated.
