Ingredients
2 tablespoons chopped canned chipotle chiles in adobo sauce
3 pounds ground beef chuck
2 cans (14.5 ounces each) kidney beans, rinsed and drained
3 cans (14.5 ounces each) diced tomatoes in juice
1 bottle (12 ounces) mild lager beer
Shredded cheddar cheese (optional)
Fresh cilantro, chopped (optional)
Avocado, diced (optional)
Tortilla chips (optional)
1 to 2 tablespoons vegetable oil
3 medium onions, chopped
6 garlic cloves, chopped
Coarse salt and ground pepper
3 tablespoons chili powder
1/4 teaspoon ground cinnamon
1 can (6 ounces) tomato paste
Directions
1. Add oil into a large pot. Heat on medium and add in onions and garlic. Season with salt and pepper and stir mixture periodically. Cook for 3-5 minutes until ingredients soften.
2. Stir in chili powder, chipotles, and cinnamon. Cook for 3-5 minutes until the mixture turns brown.
3. Add beef and cook for 5 minutes until it is completely brown.
4. Add in remaining ingredients including tomatoes with juice, beer, and beans. Include optional ingredients if you prefer. Bring mixture to a rapid boil and then reduce to a simmer. Continue to cook for about five minutes over medium heat until the beans have softened, and the juice has thickened.
Pro tip: If you want an extra kick to this recipe, try adding a shot of tequila to the mixture along with the beer.
