How to make Chinese-inspired beef & broccoli in oyster sauce

Chinese-inspired beef & broccoli in oyster sauce
Preparation Time: 90 minutes
Total Time: 2 hours
Serves: 4
Ingredients
Marinade
Pinch of salt
1/2 teaspoon granulated sugar
1/2 tablespoon of vegetable oil
3 tablespoons water
1/2 teaspoon baking soda
1 1/2 tablespoons cornflour
1 tablespoon rice wine (or dry sherry if you can't find any)
1 tablespoon finely diced ginger
Stir Fry
1 pound of beef (your favorite cut)
Broccoli
1 1/2 tablespoons vegetable oil
1 clove garlic
1 teaspoon diced ginger
2 tablespoons Oyster Sauce
1 teaspoon of cornflour
5 tablespoons water
Directions
1. Slice your beef into thin strips and place them in a bowl.
2. Add your salt, sugar, vegetable oil, water, baking soda, cornflour, rice wine and ginger into the bowl with your beef. Mix until all of the meat is coated. Cover and marinate for at least an hour.
3. Chop up broccoli and blanch in hot water quickly. Don't let the broccoli get too soft. Remove from heat, drain and set aside.
4. Add your vegetable oil to a hot wok on high heat. Then add your ginger and garlic.
5. Add your meat to the hot pan. Make sure your beef lays in a single layer and allow it to cook until the meat caramelizes a bit.
6. Reduce the heat to low. Keep cooking until your meat is completely browned.
7. Add your broccoli and oyster sauce. Stir until everything is coated.
8. In a separate bowl combine your corn flour and water. Mix well and pour over your meat and vegetable mixture.
9. Turn the heat back up to medium and fry until the sauce thickens.
Serve with rice or your favorite noodle.
Pro tip: Don't skip the baking soda step! Baking soda helps soften the meat so you'll get succulent bites when it's time to eat. ​
