Honey Garlic Rosemary Chicken

2lb (900g) boneless, skinless chicken thighs
5 sprigs fresh rosemary
8 shallots, peeled and cut into halves
3 cloves garlic, crushed and finely chopped
1/3 cup (113ml) soy sauce
1/3 cup (113ml) honey
1/3 cup (113ml) balsamic vinegar
2 teaspoons dried thyme
1/2 teaspoon white pepper
1/4 teaspoon red chili flakes
Place the boneless, skinless chicken thighs into the bottom of a greased slow cooker and place the shallot halves around them.
Pour over the soy sauce, honey, and balsamic vinegar before stirring in the garlic, white pepper, chili flakes, and dried thyme. Spread the sprigs of fresh rosemary over the top of the chicken and cover and cook on low for 8 hours.
If you are home during the cooking time, every few hours or so, check in to spoon the cooking juices over the top of the chicken, although this isn't necessary.
