Slow cooker pot roast

Serves: 6-8
Ingredients
3 - 3 ½ pounds boneless beef chuck, browned on all sides
Salt and fresh ground pepper to taste
Olive oil or other neutral vegetable oil
1 cup medium carrots, sliced in ½ rounds
2 large ribs celery, cut into ½-inch slices
1 medium onion, cut into ½-inch dice
2 cloves garlic, peeled and lightly crushed
1 navel orange, unpeeled, cut into quarter-round slices
Large bunch of fresh thyme and fresh parsley, tied together with kitchen string, or 1 tsp dried thyme and 1 tsp dried parsley
1 dried bay leaf
½ cup crushed tomatoes and juice
½ cup red wine or beef stock
Directions
1. Brown the beef chuck in a pan on high heat. Make sure to season with salt and pepper on both sides.
2. Place all the dry ingredients in slow cooker (aside from beef chuck), making sure the insert is at least half full. Then set beef chuck on top.
3. Add in beef stock and crushed tomatoes and juice.
4. Cover and set on Low for 8 hours. Roast is done when meat is easily pulled with a fork. Serve with a side of potatoes.
