Here's how to make your own taco seasoning

When it comes to taco seasoning, there's only one rule: make what you like. Seasoning anything is an endeavor subject to individual tastes and dietary needs, but taco seasoning is a particularly personalized adventure.
Having established that rule, however, there are definitely some basics to keep in mind when experimenting. There are specific spices, such as cumin, that make taco seasoning recognizable for what it is, so you will probably want to include them in your recipe.

To begin discovering your perfect taco seasoning, start experimenting with this basic recipe:
1-1/2 teaspoons cumin, ground
1 teaspoon chili powder
1 teaspoon black pepper, ground
1 teaspoon coarse salt (sea salt or kosher salt)
1/2 teaspoon paprika
1/4 teaspoon garlic, powdered or granulated
1/4 teaspoon onion, powdered or granulated
1/4 teaspoon red pepper, crushed
1/4 teaspoon oregano, dried
Give this recipe a try, then adjust it to your tastes. Hate oregano? Leave it out. Want more heat? Add more chili pepper. Try smoked paprika instead of regular for an added boost of flavor. Add cornstarch as a thickening agent if appropriate. For a finer texture, grind the mixture in a coffee grinder.
Packaged taco seasoning may seem inexpensive, but since you probably already have these spices in your kitchen, doesn't it make sense to use them? You save a trip to the grocery store, keep your spice rack fresh, and avoid the salt, MSG and unpronounceable chemicals often found in premade packets.
