This recipe can be as easy as popping everything into your trusty slow cooker and sitting back with your feet up while it works its magic! 3lb 1.5kg Yukon Gold potatoes, peeled and quartered
1 tablespoon olive oil
1 white onion, diced
2 ribs celery, diced
2 carrots, diced
1 leek, peeled and finely chopped
1 tablespoon oregano
4 cups (1 litre) chicken stock
½ bunch fresh parsley, stems chopped and leaves picked
½ pointed cabbage, roughly chopped
½ teaspoon flake salt
¼teaspoon black pepper
Place the olive oil in a large frying pan over medium heat and add in the onion, celery, carrots and leeks. Sprinkle over the marjoram, salt and pepper and cook until the vegetables have just begin to soften (about 8 minutes)
Put the vegetables into the bottom of a 5-quart slow cooker and add in the potatoes, chicken stock, cabbage, and parsley stems.
Stir with a wooden spoon until well combined before covering and cooking on low for 7-8 hours
Serve with a sprinkling of fresh parsley leaves.

Pro tip: For an added bit of heartiness, quickly fry up 3 German sausages 10 minutes prior to serving and slice them over the top of the soup!
