How to make a frittata in a Bundt pan (video)

We have a new twist on an old-school cake mold that will bring your Bundt pan into 2017. Now, you might remember Bundt cakes, first popularized in the US in the 1950s and 1960s. If you don't remember them, you have certainly seen the pan in your grandmother or mother's kitchen. They were originally inspired by a European brioche-like cake from Germany and their shape really took off here in the US.
Now, you can put a modern twist on it by combining the Bundt with another classic from Europe: the frittata. Frittatas are the Italian version of a crustless quiche, basically a mixture of eggs and other ingredients like cheese, meat and veggies. It's super simple to put together, and your bundt shape will surely please for breakfast. Frittata in a Bundt pan
Preparation Time: 10 minutes
Total Time: 50 minutes
Serves: 8-10
Ingredients
Bundt pan
Large mixing bowl
One dozen large eggs
Wire whisk
Salt
Pepper
Olive oil
12 oz. package frozen spinach
2 cups shredded cheese
Fresh herbs
Salsa (optional)
Directions
1. Preheat your oven to 350° and grease your bundt pan with a layer of olive oil.
2. Whisk one dozen eggs in a large mixing bowl until they are the consistency you'd typically have with scrambled eggs.
3. Lightly season the eggs with salt and pepper.
4. Break apart a 12 oz. package of frozen spinach. No need to thaw it ahead of time, you can leave it frozen. Fill the bottom of the bundt pan with the frozen spinach and season with salt and pepper.
5. Create an even layer of shredded cheese on top of the bottom layer of spinach in the bundt pan.
6. Bake for 30-35 minutes and let cool for 5 minutes. Then, using a spatula, pull the edges from the outer and inner rings of the bundt pan.
7. Flip over onto a plate and serve with fresh herbs sprinkled on top or pour fresh salsa over the bundt-shaped frittata.
Pro tip: as you pour the eggs into the bundt pan, rotate the bundt rather than trying to move the large mixing bowl around. It will help coat everything more evenly. If there are any areas that don't get coated with eggs, you can use the handle of your wire whisk to gently push everything into the mixture.
