Potato and Green Been Casserole

32oz (900g) fresh or frozen trimmed green beans
1lb (450g) Yukon gold potatoes, sliced 1/3 cm thick
10oz can cream of chicken soup
10oz can cream of mushroom soup
½ cup (113ml) milk
8oz (226g) parmesan cheese
1/8 teaspoon nutmeg
4 whole sprigs fresh thyme
¼ teaspoon salt
¼ teaspoon pepper
8oz (225g) fried onions, to serve
Place the green beans and potatoes into the bottom of a 5-quart slow cooker and pour the cream of chicken soup, cream of mushroom soup, milk, parmesan and nutmeg over the top. Stir well with a wooden spoon to combine.
Place the sprigs of time over the top of the of the beans and sprinkle over the salt and pepper.
Cover and cook on low for 6-7 hours, or until the potatoes are fork-tender. Sprinkle the fried onions over the top to serve.

Pro tip: To add a delightful bit of smokiness to this amazing dish, fry up a few slices of bacon and crumble it over the top of the casserole along with the fried onions in the last step!
