Low-carb ham, cheese and egg baked cups
Ingredients
2 tablespoons olive oil
12 slices ham
1½ cups your favorite shredded cheese (we use mozzarella)
12 eggs
Salt and pepper to taste
2 tablespoons finely chopped fresh parsley

Directions
1. Preheat oven to 375 degrees Fahrenheit.
2. Grease a muffin tin with olive oil.

3. Place a slice of ham in each cup. Using your fingers, press the ham against the bottom and sides, forming to the shape of the muffin cup.

4. Add 1 to 2 tablespoons cheese.
