Ingredients
2 pounds sweet potatoes, peeled
3 large eggs, beaten
1 cup grated Parmesan cheese
¼ teaspoon salt
¼ teaspoon ground pepper
1 tablespoon extra-virgin olive oil
3 strips center-cut bacon, chopped
1 8-ounce package sliced mushrooms
2 cloves garlic, minced
1 5-ounce package baby spinach
Directions
1. Boil a large pot of water.
2. Cut sweet potatoes into long spirals using a vegetable slicer. You should have about 12 cups of sweet potato noodles once you are finished.
3. Cook the sweet potatoes for about 2-3 minutes until they just start to soften.
4. Drain the sweet potatoes, but reserve about 1/3 cups of water in the pan.
5. Return the noodles to the pot, but be careful to keep it off the heat. Do not add the reserved water yet.
6. Add in eggs, parmesan, salt, and pepper to the water. Pour the mixture over the noodles until completely covered.
7. In a separate pan, cook bacon and mushrooms for about 8 minutes until the mushrooms start to brown.
8. Add garlic and cook for about 1 minute.
9. Add spinach and cook for 1 to 2 minutes until slightly wilted.
10. Add the vegetables to the noodles and mix together by tossing. Don't stir.
11. Top with pepper to taste.
