There is good reason to wonder about the difference between a frittata and an omelet: they are both eggs-and-vegetable dishes, and Google Translate says that "frittata" is the Italian word for "omelet." No wonder it's so confusing!

Healthy frittata with sweet potatoes and spinach
Preparation Time: 15 minutes
Total Time: 45-50 minutes
Serves: 4
Ingredients
3 medium-sized sweet potatoes, peeled and thickly sliced
10 egg whites
3/4 cup + 1-1/2 tablespoons (200 milliliters) skim milk
Sea salt to taste
Black pepper to taste
1 asparagus bunch, chopped into 1-inch (2.5 centimeters) pieces
3.5 ounces (100 grams) fresh spinach
Directions
1) Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
2) Preheat grill to high heat; grill sweet potato wheels for 3 minutes each side.
3) In a large bowl, whisk together the egg whites, milk, salt, and pepper until egg whites are well beaten and bubbly.
4) Add sweet potatoes, asparagus, and spinach to egg mixture and mix well.
5) Transfer entire mixture to square baking dish lined with parchment paper. Use hands to distribute mixture evenly.
6) Bake for 30-35 minutes, until egg mixture is thoroughly set and asparagus is soft. Remove from dish by lifting paper, cut into pieces and serve.
This dish also resembles a quiche, and, like a quiche, should be treated as an entrée. Serve with a dark green salad containing large chunks of vegetables and a bold dressing to compliment the smooth flavors of asparagus, sweet potato, and egg.
