Pepperoni pizza potato skins
Preparation Time: 10 minutes
Total Time: 1 hour 15 minutes
Serves: 3-4
Ingredients
3 potatoes (washed)
olive oil
salt
1 cup marinara sauce
1 cup shredded mozzarella cheese
mini pepperoni slices
freshly chopped parsley, basil, or green onions (optional)
Directions
1. Preheat the oven to 400°F (204°C).
2. Wash the potatoes, coat with a small amount of olive oil and sprinkle some salt on the outside of them. Place them on a baking sheet and let them bake for 1 hour.
3. Once they're finished, cut them in half longways. Lay the halves open on the baking sheet and scoop out the insides.
4. Fill the skins with marinara sauce, mozzarella cheese, and pepperoni and place in the oven to bake for 5 to 7 minutes.
5. Garnish with your favorite fresh toppings: parsley, basil, onion...
