Preparation Time: 10 minutes
Total Time: 40 minutes
Serves: 6-8
Ingredients
¼ cup sugar
3 tablespoons all-purpose flour
2 teaspoons baking powder
1 ½ teaspoons salt
6 large eggs
2 cups whipping cream
½ cup butter, melted
6 cups fresh (about 12 ears) or frozen corn kernels
Directions
1. In a mixing bowl, combine sugar, flour, baking powder and salt. Set aside.
2. Whisk eggs, whipped cream and butter. Slowly add in the flour mixture. Stir in corn.
3. Pour mixture into a 9" x 13" casserole dish and bake in a preheated oven at 350 °F for 45 minutes or until the top is golden brown.
4. Allow to cool for 5 minutes before serving sprinkled with chopped chives if desired.
Pro tip: For a Southwestern spin on this recipe, stir in 1 (4.5-oz.) can of chopped green chiles and ¼ tsp. ground cumin.
