Chicken and dumplings is a lot like chicken pot pie, without all the work of pulling together a pie crust and lining it perfectly around the delicious chicken stew inside. In this recipe, veggies come together before being cooked into a roux, which is then turned into a delicious chicken gravy. Cooked chicken is added, and dumplings are spooned on top. Then the entire thing bubbles away in the oven for just a few minutes.
At least it does in this recipe. Sometimes, however, I find that with the pot already being on top of the stove, I just spoon the dumplings on, cover the pot and let the dumplings steam through. This technique is especially good on hot days when you don't want to heat up the house with your oven!
