Cabbage roll soup

Ingredients
1 large onion, diced
3 cloves garlic, minced
1 pound lean ground beef
½ pound lean ground pork
¾ cup uncooked long grain rice
1 medium head cabbage, chopped
1 (28 -ounce) can diced tomatoes
2 tablespoons tomato paste
4 cups beef broth
1½ cups vegetable juice
1 teaspoon paprika
1 teaspoon thyme
1 tablespoon Worcestershire sauce
1 bay leaf
salt and pepper, to taste
Directions
1. Brown your pork and beef in a big pot with onion and garlic.
2. Drain the fat from the mixture and put the meat and onion back on the heat.
3. Add cabbage and allow it to cook for a few minutes until the cabbage softens.
4. Add rice, diced tomatoes, tomato paste, beef broth, vegetable juice, paprika, thyme, and Worcestershire sauce. Stir to combine.
5. Tuck a bay leaf into the soup and cover.
6. Allow the soup to simmer on low to medium heat for 25 to 30 minutes.
7. Remove bay leaf and discard. Serve with warm rolls.
Pro tip: If you don't have Worcestershire sauce on hand, you can use steak sauce or soy sauce as a substitute.
